Trouble In Paradise

June 28th, 2010

trouble
Well, all good things must come to an end as they say. I ended my winning streak with a bang yesterday…literally. Got into a car wreck yesterday afternoon. Someone ran a red light and T-boned me. It was a driver side impact. Pretty surreal. The whole thing was a blur. I am so grateful for emergency services. They were on the scene lickety split. I barely knew what happened. People were coming to help from everywhere. What a beautiful world!! Needless to say, I am so amazingly grateful to be alive today that it’s beyond words. I’m going to be a little sedentary for a bit. I have a few hip fractures to work through. So it’s time to catch up on my reading and internet.

kale
My sweet boyfriend left me with my bedside bowl of kale chips. Things could definitely be worse. I could get used to this.

Movin' On Up

swiss chard
Well, if you haven’t noticed, my posting has been a bit irregular the last couple weeks. That’s because I’m in the middle of moving! Eating well during a move is always a challenge. I haven’t been perfect by any means, but I’ve been trying. Look at this swiss chard I picked from my GARDEN a few days ago!

After I picked it, I kept it in a bowl of water for a couple days while I had a chance to eat it all. It stayed pretty fresh this way. At night before bed, I cut the tips off and changed the water. It lasted like this for about three days.

We’ve been eating lots of summer rolls for our summer move. This is a very exciting move for me, and I’ll tell you why. We are moving into an artist loft space. My new place has lots of amenities that are PERFECT for me. It’s amazing how well things are starting to unfold in a more positive direction.

There is a catering/event space in my building that all residents are allowed to use. You can’t see it in this picture, but there is a really nice fireplace.

kitchen
This is the kitchen that goes with the event space. Umm…did I mention that I’m starting a catering business?! I almost had to pinch myself. The kitchen in my apartment is amazing too!! But I can’t show you the picture yet because it’s kind of in the state of moving/disaster area.

dehydrator
I can show you the latest addition to my kitchen though…my new commercial dehydrator!!

dehydratorLook! It has fancy blinky lights. :) Also, it has a huge capacity. It takes about twice as long as the EXCALIBUR, but it has about 4 times the capacity. Needless to say, I have lots more good news to come. And a little bad news. Some medical mishaps. But I needed something to balance out the roll I’m on. Otherwise, it might start to get annoying. :)

Sprouting and Energy Soup

s and me
I just posted a new episode on PRL TV! This week, we have a special guest…SONJA. Don’t we look like food network divas? Actually, this was a picture of our whole class at 105 DEGREES taken by RUSSELL JAMES. For some reason, I have a ton of pictures with HELEN…and lots of pictures of Helen and Sonja…but none of Sonja and I. Anyway, I hope you enjoy the episode.

Still more good news on the way. I’m on a roll…kinda.

Nice Ride MN

June 5th, 2010

nice ride
Check this out! My fair city is unveiling this new program this month that is FANTASTIC! It’s called NICE RIDE MN. Basically, they’re installing these bike kiosks all around the city. This is the first one (conveniently installed in front of my FAVORITE restaurant, the BIRCHWOOD CAFE). For a $60/year subscription, you can borrow a bike at any of these kiosks and return it at your convenience. You can also do 1 day or 1 month subscriptions!

How cool is that?! I have lived a lot of places. But Minneapolis is definitely the best city for biking!! I love this town!
